Protein Banana Loaf

Finally!

A no flour recipe for this banana loaf made entirely with protein powder! Previous attempts always end up becoming too dry so I was half hoping this would not fail!

Alas, a quick and easy protein powder recipe to make sure you fill up on your protein intake while satisfying your sweet tooth!

Here it goes:

5 protein scoops (70cc or 25g to be exact) of rolled oats
2 tablespoons cinnamon powder
3 scoops protein powder (I used myprotein protein powders)
5 tablespoons myprotein golden syrup sauce
1/2 tablespoon baking powder
2 eggs
5 bananas (2 to top for aesthetic purposes, 3 mashed inside)
1/2 cup milk

Optional: 1 tbsp sugar to sprinkle before baking (this gives the caramelized taste and look to the bananas)

I’m an efficient one bowl recipe person so just mix them all up and transfer to a loaf tin!

Bake at 160 degrees Celsius for about 25 min or until the loaf starts to brown. Then turn up the heat to 180 degrees Celsius for another 5 to 10 min so that the top of the loaf gets a nice broil.

Allow to cool before cutting. The caramelized crust will be crunchy!

Yay! The insides have a rather moist texture!
