Easy and Healthy 1 Bowl Sweet Potato & Chives Pancake

This super easy recipe is a life saver when you need something to whip up really quick! Sweet, savory and low calorie, this is a treat perfect for anytime of the day!

Ingredients

– 2 sweet potatoes
– 2 cups chives
– 0.5 cups onions
– 4 eggs
– 2 tbsp flour
– 1 tbsp corn starch
– Pinch salt
– Pinch pepper

Ingredients for dipping sauce

– 2 tbsp minced garlic
– 4 tbsp vinegar
– 4 tbsp soy sauce

There really ain’t any secret to this one bowl recipe except for throwing everything in and mix it up! A quick tip here on how to adjust the salt and pepper to your liking though, is to add the flour, corn starch and eggs only after you’ve approved the taste of the mixture!

How it should look like after everything is mixed in

I preheated my pan and gave a generous coating of oil and when the pan is hot enough, pour in your mixture and use a spoon in circular motion to flatten it out. Cover with a lid for quicker and more even cooking.

When the bottom has browned, flip the pancake onto a plate and slide it back into the pan to cook the other side. This ensures that your pancake doesn’t fall apart! Cover lid again until both sides are beautifully browned.

And that’s it, you’re done!
